Air Fryer Twice Baked Potatoes

This easy side dish tastes like you spent all day in the kitchen, but only takes a fraction of the time with an air fryer!

Ingredients

  • 2 baked potatoes cooled
  • 1 tablespoon ranch dressing
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper
  • ½ cup sour cream
  • 3 tablespoons melted butter
  • ½ cup bacon bits
  • ½ cup chopped onions
  • 1 cup shredded Colby Jack cheese

Instructions

  • Slice your cooled baked potato lengthwise.
  • Using a scoop or a spoon, scoop the potato meat out of the skin. Be careful not to rip the skin.
  • Place the potato “meat” in a mixing bowl.
  • Add the Ranch dressing, salt, pepper, and sour cream. Mix until combined.
  • Add the melted butter, bacon bits, chopped onions, and shredded cheese.
  • Mix until all ingredients are incorporated.
  • Using a spoon, fill the potato skins with the potato mixture.
  • Sprinkle cheese and bacon bits on top.
  • Place in the air fryer, on manual setting at 350 degrees F. Cook for 8 to 10 minutes or until the cheese is nice and melted and the potato is warm.

Note:

Topping with cheese at the beginning and cooking for 8 to 10 minutes, makes the cheese melted and golden.
If you prefer the cheese not to be too golden, like a pizza, cook the potato for 5 to 6 minutes then add the cheese and bacon bits. This way the cheese just started to melt and depending on the cheese you use it may be more stringy.

Freezer: 

  1. Fill the potato skin, do not add the toppings. Place them on a plate or if you have a big freezer and need to freeze a lot of potatoes place them on a cookie sheet. Make sure there is enough space in between them so they freeze individually. You can even put a silicone mat or parchment paper on the cookie sheet so it is easier to take them off once they are frozen. 
  2. Freeze for 30 to 60 minutes. Why do I freeze them individually first? So when I put them in the foil wrap they are not sticking or any moisture is created between the foil and the potato. So when I unwrap the foil is easier to remove.
  3. Once frozen, you can wrap them individually in foil or plastic wrap. Place in a freezer-safe container or ziplock bag
  4. They can be frozen for up to 45 days for optimum flavor. 
  5. To re-heat thawed potatoes: Place them overnight in the fridge. Make sure to unwrap them, place them on a plate or I like to put them on a rack so they don’t sit in moisture.
  6. Place in the air fryer unwrapped at 375 degrees F on manual setting. Bake for 10 minutes or until internal temperature is about 90 degrees F. Add toppings and continue cooking for an additional 10 minutes or until they are nice and golden. 
  7. To reheat frozen potatoes, remove from freezer, unwrap them and place in a new foil wrap. Place in the air fryer at 350 degrees F for 20 minutes .
  8. Unwrap them, place your toppings (shredded cheese and bacon bits) and continue cooking until nice and melted. Air Fryer, manual setting at 375 degrees F for 10 to 15 minutes.
