1 ½cupscrushed vanilla wafer cookiesabout 45 cookies
1cupchopped pecans
1cuppowdered sugar
2tablespoonsunsweetened cocoa powder
¼cupbourbon whiskey
2tablespoonslight corn syrup
½teaspoonpure vanilla extract
Additional powdered sugar for rolling, holiday sprinkles, cocoa powder, etc.
Instructions
Place the vanilla wafer cookies in a blender and pulse until they become fine crumbs. (Alternatively, you can place the cookies in a plastic bag, seal it, and use a rolling pin to crush the cookies.)
Combine dry ingredients in a medium-sized mixing bowl. Add the crushed cookies, chopped pecans, powdered sugar, and cocoa powder and mix with a fork.
Add the wet ingredients: Pour in the whiskey, vanilla and corn syrup. Mix well until the mixture forms a dough-like consistency.
Using a small cookie scoop, roll small portions into 1-inch balls. Roll each ball in powdered sugar until they're evenly coated. This gives them a nice finish and helps prevent sticking.
Place the bourbon balls on a plate or baking sheet lined with parchment paper and refrigerate.
Notes
When rolling the bourbon balls, you can dust your hands with powdered sugar if the mixture is too sticky.Roll the bourbon balls in red or green sanding sugar for the holidays!When stored in an airtight container, These will last up to two weeks in the refrigerator.
