Crockpot Chicken and Sausage Gumbo

Ingredients

  • ¾ cup dark roux or ¾ cup oil, ¾ cup all-purpose rlour
  • 1 large onion diced
  • 4 cloves garlic minced
  • 1 pound smoked sausage sliced into coins
  • 8 cups chicken broth
  • 1 teaspoon white vinegar
  • 1 tablespoon cajun seasoning
  • 1 rotisserie chicken deboned and chopped
  • 1 pound frozen okra can also use one pound fresh okra, sliced

Instructions

  • Add the dark roux, diced onion, minced garlic, smoked sausage coins, chicken broth, white vinegar and Cajun seasoning to a 6 quart or bigger crock pot.
  • Cook on high for 2 hours (or low for 4 hours).
  • Add the deboned chicken and frozen okra and cook on high for another 2 hours.
  • Serve gumbo over rice.
