Chicken Bacon Ranch Tater Tot Casserole

Equipment

Ingredients

  • 1 rotisserie chicken deboned and shredded
  • 10.5 ounce can cream of chicken soup
  • 8 ounces cream cheese , softened and cut into cubes
  • ¾ cup whole milk
  • 1 ounce Ranch seasoning mix packet
  • 1 teaspoon crushed red pepper flakes
  • 6 slices of bacon cooked and crumbled, divided
  • 2 pounds frozen tater tots
  • 8 ounces block Colby Jack cheese shredded
  • ¼ cup green onions sliced

Instructions

  • Preheat oven to 375 degrees F. Generously spray a 9x13-inch casserole dish with cooking spray.
  • In a large bowl, combine chicken, soup, cream cheese, milk, ranch seasoning, crushed red pepper, and half of the shredded cheese. Mix well until thoroughly combined.
  • Spread the chicken mixture evenly into a prepared 9x13-inch casserole dish.
  • Top the chicken mixture with half of the crumbled bacon.
  • Arrange the frozen tater tots over the top.
  • Bake, uncovered, in preheated oven for 30 minutes until the tater tots are cooked through and turn golden-brown.
  • Remove casserole from oven, and cover with remailing cheese.
  • Bake for an additional 10 minutes until the cheese is melted and the casserole is bubbly.
  • Garnish with remaining bacon and green onions.
