Homemade Buckeyes Recipe

You're going to love this simple buckeye recipe! This simple homemade treat is easy to make and the no-bake peanut butter ball tastes even better than reese’s peanut butter cups!

Equipment

Ingredients

  • ¾ cups creamy peanut butter
  • ½ cup butter softened
  • ½ teaspoon vanilla
  • ½ teaspoon kosher salt
  • 2 ½ cups powdered sugar
  • FOR THE CHOCOLATE COATING
  • 2 cups dark chocolate chips
  • 2 tablespoons coconut oil

Instructions

  • Using an electric mixer or stand mixer, mix together the butter, peanut butter, salt and vanilla until smooth and creamy.
  • Add the powdered sugar in a couple batches.
  • Cream the peanut butter mixture together until it's smooth.
  • Using a small cookie scoop, scoop the batter, roll into 1-inch balls and place a baking sheet lined with parchment paper or wax paper.
  • Refrigerate for 10 minutes, roll into smooth balls. Pop into the freezer for 20 minutes or refrigerate overnight.
  • FOR THE CHOCOLATE COATING
  • Add the coconut oil to the chocolate chips. Melt in the microwave at 30 second intervals, stopping to stir every 30 seconds. Continue until the chocolate is completely smooth.
  • Insert toothpick into the top of the chilled peanut butter balls. Then dip it in the chocolate coating.
  • Allow excess chocolate to drizzle off and place it on a cookie sheet lined with parchment paper.
  • Refrigerate the homemade buckeyes so chocolate can harden. Serve and enjoy!

Notes

Variations - instead of dipping in melted chocolate consider rolling the peanut butter balls in:
  • chopped nuts
  • candy sprinkles
  • powdered sugar
  • cocoa powder
  • cane sugar
Optional - Smooth out the hole on top of the buckeye made by the toothpick after dipping.
