You're going to love this simple buckeye recipe! This simple homemade treat is easy to make and the no-bake peanut butter ball tastes even better than reese’s peanut butter cups!
Using an electric mixer or stand mixer, mix together the butter, peanut butter, salt and vanilla until smooth and creamy.
Add the powdered sugar in a couple batches.
Cream the peanut butter mixture together until it's smooth.
Using a small cookie scoop, scoop the batter, roll into 1-inch balls and place a baking sheet lined with parchment paper or wax paper.
Refrigerate for 10 minutes, roll into smooth balls. Pop into the freezer for 20 minutes or refrigerate overnight.
FOR THE CHOCOLATE COATING
Add the coconut oil to the chocolate chips. Melt in the microwave at 30 second intervals, stopping to stir every 30 seconds. Continue until the chocolate is completely smooth.
Insert toothpick into the top of the chilled peanut butter balls. Then dip it in the chocolate coating.
Allow excess chocolate to drizzle off and place it on a cookie sheet lined with parchment paper.
Refrigerate the homemade buckeyes so chocolate can harden. Serve and enjoy!
Notes
Variations - instead of dipping in melted chocolate consider rolling the peanut butter balls in:
chopped nuts
candy sprinkles
powdered sugar
cocoa powder
cane sugar
Optional - Smooth out the hole on top of the buckeye made by the toothpick after dipping.
