Line baking sheet with wax paper or parchment paper.
Place the Oreos in a food processor and pulse until they are fine crumbs. You may need to do this in batches.
Cube the softened cream cheese and add it to the oreo crumbs in the food processor. Pulse in bursts until well combined and no chunks of cream cheese remain.
Using a small ice cream scoop, scoop small balls. About 1 tablespoon of candy at a time and form into 1-inch balls. Place on a prepared cookie sheet and freeze for 15 minutes.
Place chocolate in a microwave safe bowl. Add vegetable and melt in microwave at 30 second intervals until smooth and silky.
Remove truffles from freezer. Dip each truffled into melted chocolate. Allow excess chocolate to run off.
Return to baking sheet and immediately add pretty sprinkles if desired. Allow chocolate to set. Store refrigerated in an airtight container.
