Chicken Chow Mein

Ingredients

  • 8 ounces spaghetti or fresh noodles
  • 2 Quarts water + ⅓ cup divided
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 2 cups coleslaw mix
  • 1 pound rotisserie chicken chopped
  • 1 packet 0.75oz stir fry seasoning mix
  • 2 tablespoons soy sauce

Instructions

  • Bring 2 quarts of water to boil in a medium pot. Add the salt.
  • Add spaghetti and cook for 6 minutes (until al dente), then drain and rinse with cold water.
  • In a large skillet add the olive oil and heat up with medium-high heat.
  • Add the coleslaw mix and cook for 5 minutes, until wilted.
  • Add the chicken and spaghetti and heat through.
  • Mix together the stir fry seasoning mix, soy sauce and ⅓ cup water, with a whisk.
  • Pour all over the chicken and spaghetti and toss well until all is coated and heated through.
  • Sprinkle some green onions on top (optional garnish) and serve immediately.
