Chicken Chow Mein

- 8 ounces spaghetti or fresh noodles
- 2 Quarts water + ⅓ cup divided
- 1 teaspoon salt
- 2 tablespoons olive oil
- 2 cups coleslaw mix
- 1 pound rotisserie chicken chopped
- 1 packet 0.75oz stir fry seasoning mix
- 2 tablespoons soy sauce
Bring 2 quarts of water to boil in a medium pot. Add the salt.
Add spaghetti and cook for 6 minutes (until al dente), then drain and rinse with cold water.
In a large skillet add the olive oil and heat up with medium-high heat.
Add the coleslaw mix and cook for 5 minutes, until wilted.
Add the chicken and spaghetti and heat through.
Mix together the stir fry seasoning mix, soy sauce and ⅓ cup water, with a whisk.
Pour all over the chicken and spaghetti and toss well until all is coated and heated through.
Sprinkle some green onions on top (optional garnish) and serve immediately.
