Cheesy Hamburger Casserole Recipe

Ingredients

  • 12 ounces medium size pasta shells
  • 1 pound lean ground beef browned
  • 1 small onion diced
  • 3 cloves garlic minced
  • 15 ounce can fire roasted tomatoes drained
  • 2 teaspoons Italian seasoning
  • 1 teaspoon Worcestershire sauce
  • 1 cup freshly grated Colby Jack Cheese divided
  • ½ cup sour cream room temperature
  • 8 ounces cream cheese room temperature
  • ¼ cup chopped parsley plus extra to garnish
  • salt and pepper to taste

Instructions

  • Preheat the oven to 350°F. Spray casserole dish with non-stick cooking spray, set aside.
  • Add the pasta shells to a large pot of boiling salted water. Cook the shell until al dente, drain well and set aside.
  • While the shells are cooking add the ground meat to a large skillet and cook until browned.
  • Remove from the skillet and add the onion and cook for a few minutes then add the garlic.
  • Once the onion are nice and soft add the ground beef back to the skillet along with the tomatoes, Italian seasoning and Worcestershire sauce.
  • Heat through then turn off the heat.
  • Add the cream cheese, sour cream and chopped parsley to the noodles. Stir well to combine until they are all melty with the noodles.
  • Spoon into 9x13" casserole dish in an even layer.
  • Add half of the grated cheese over the top of the shells then top with the ground meat mixture. Spread in an even layer.
  • Sprinkle with the remaining cheese and bake uncovered for 30 minutes until hot and bubbly. Remove and garnish with a little chopped parsley.
