Roasted Salsa Verde Recipe - Fresh tomatillos, chilis and jalapenos roasted until charred and flavorful! Serve with your favorite chips!

Ingredients

  • 7-8 tomatillos peeled and washed
  • 1 Anaheim chili seeded and sliced in half
  • 1 jalapeno seeded and sliced in half
  • 1 cup chicken stock *vegan option - substitute water or vegetable stock
  • ½ yellow onion rough chop
  • 1 teaspoon salt
  • 1 lime juiced

Instructions

  • Clean and peel the tomatillos, set aside. Slice the chili and jalapeno in half, remove seeds.
  • Preheat the grill to 400 degrees.
  • Grill the tomatillos, chili and pepper until lightly charred.
  • Add the grilled ingredients to a blender, adding in the remaining ingredients. Blend until well chopped.
  • Serve with your favorite crackers and enjoy!

Notes

*Want to make this vegan? Simply substitute vegetable stock or water for chicken stock!
