What happened when life gave me lemons
Ok….my first post I made as a blogger was entitled when life gives you lemons. This was inspired by my mom-in-law, who has a very prolific meyer lemon tree. We harvested pails & pails of lemons from this tree. I’m not joking, it was incredible! They were fresh and tart. When I brought them home, the entire house smelled so wonderful. It was such a treat! Here’s a picture of a portion of the pile….so when I say prolific, you understand I was not joking!
I posed the question on Facebook….what’s a girl to do with so many lemons and I had lots of response. Lemon pie, lemon marmalade, lemon curd, lemon pie and toss the rest (that one was the most popular! ;-). But throwing away food is throwing away money and so the ingredient lemon became a featured item or side ingredient to so many of my recipes the last four months…..yes…..they kept for four months, carefully stored in my refrigerator!
Well, I have to say, one of my favorite recipes is my from Cuz Wayne, who sent me his Lemon Drop Martini recipe. My hubby is a bit of a Vodka expert and he grudgingly said I could use some of his good Vodka to make the Martini’s. I mean we’re newlyweds and all, so he still indulges my whims!
The nice thing about the martini is it allowed me to ponder what else could I do? Well of course a Lemon Meringue Pie was next!
This was as good as it looked! Though my next pie….I neglected to put in the thickening agent….oops! And it was reduced to Lemon Pie Puddle. But as my husband says; sometimes failures are an unexpected stepping stone to success. With that pie – that tasted great but looked terrible, I created a Lemon Pie Milk Shake – unbelievable! When you make this at home, you can use any type of pie. It doesn’t have to be lemon!
Ok….I guess by this point you understand I was making the most of lemons for dessert!
I made Baked Chicken with Lemon – delicious! I used lemon in my Remoulade Sauce and created Confetti Quinoa Salad – a light a flavorful salad that is a burst of fresh flavor in your mouth!
And lastly, I froze a few. Simply froze them. They are like little lemon ice cubes in the freezer and whenever I need a fresh zest of lemon to brighten a flavor, I simply nab it out of the freeze, zest it and tuck it back in the freezer bag for next time. They will last in the freezer several months this way if you wrap them carefully!
So the morale of my story is….when life gives you lemons – you make the very most of it! I hope you enjoy these recipes and tips!
