Lemon Meringue Pie Milkshake

When you make something and it’s a failure, do you get disappointed? Well, I don’t know about you, but I certainly do. Now I understand you’re not going to hit a home run every time, but that doesn’t mean I can’t try. Recently I dug out an old family cookbook. These are recipes from my Great Grandmother, Grandmother, Aunts, Uncles, Cousins, etc. These recipes are loved & cherished! It’s fun to recreate these masterpieces and what I was looking for today was my Grandmother’s Lemon Meringue Pie Recipe. I’ve never made a Lemon Meringue Pie, and t’s no secret that I’m not a baker and I don’t eat many sweets, however….I am a newlywed and my husband has a sweet tooth big enough for both of us and I wanted to make something special for him!
I dug out Grandma’s recipe and went to work! Oh my gosh, it turned out beautiful! The curd was tart but sweet and it looked just gorgeous! Â I tucked it in the oven as I was talking to my Mom on the phone and mentioned I sure hoped the curd would firm up because it was very runny. She assured me it would.
It did not….However, because my hubby was expecting pie, pie was served! Instead of Lemon Meringue Pie, I renamed it Lemon Pie Puddle instead. (I believe I added 3 teaspoons cornstarch, rather than the 3 tablespoons the recipe called for….remember, I’m not a baker!) I was disappointed! He wasn’t & said it tasted delicious. (I had my doubts….)
Because he has such a sweet tooth, my hubby wouldn’t let me throw it away. Which was crazy! It looked terrible, but he assured me it tasted divine. He caught me hovering in the kitchen with the pie in my hand seconds before I tossed it in the trash. This is where the genius part kicks in! Dan suggested that I make it into a milkshake! I remember looking and him and saying hey….you got something there! Into the kitchen I went!
I took about 4 scoops of ice cream, 3/4 cup milk and the remains of the pie, crust, lemon puddle & meringue and put everything in the blender.
The meringue on the cake was perfect, so I carefully cut a circle out of the meringue to place on top of the shake and put the rest in the blender. I turned it on wiz and blended it up.
It made the most incredible milkshake you’ve EVER had in your life!
When life gives you lemons? Yeah…..I got that!
