Food for Thought
We’ve had lots of company lately and I’ve made tons of different food. This was a terrific salad, using crunchy lettuce, red onions, avocado, oranges and pink grapefruit. I made an easy vinaigrette and it was so fresh and delicious!
We ate lots of wonderful meals – like this platter of chicken fajitas that I served with delicious black beans.
They were so good! I made enough for a small army though and after the company was gone, we were left with tons of chicken, peppers, onion and beans. We enjoyed another meal or two and afterwards I wrapped them up well and tucked them in the freezer for another day.
Well, last night I just wasn’t sure what to cook and when I have days like that I look to my freezer. It’s easy to rush out and buy something, but it’s not very economical or nutritious. That’s why I carefully package up leftovers for another day. Long story short, I pulled out the chicken, peppers and onions and chopped them into small bite sized pieces.
Next I diced a red onion and started by sautéing it in a stock pot for about five minutes. From there I added a packet of fajita seasoning – nothing fancy, just the store bought stuff. Then I added all of my leftovers – chicken, peppers, onion and the black beans – juice, everything – all to the pot and poured in four cups of chicken stock. I let it simmer for about 30 minutes. And this is what I ended up with!
An amazing bowl of soup! Can I make it again EXACTLY like this?….probably not. However by repurposing leftovers I was able to make a completely different meal a couple weeks later for just pennies!
