My hubby and I haven’t been married very long, in fact we just celebrated our 3 year anniversary! Of course the first big adjustment was moving in together – the merging of the “stuff”. It took a lot of effort because we both had dogs and I had a cat. (I called us the Brady Brunch, but with dogs.)  We had duplicates of many items, one of which was coffee makers. We both adore coffee and neither of us wanted get rid of our device. So the solution? Put one in the kitchen and the other in our bedroom – YES! So though it may seem over-the-top, it’s super cool to have that extra coffee maker in our room, kinda like a hotel. It’s safe to say we haven’t met a cup of coffee we haven’t liked!

So what’s better than a great cup of coffee? Iced coffee of course! I found International Delight Iced Coffee in the refrigerated tea/juice section at my local Walmart.

Here in the Central Valley the temperatures have been hovering around 100 degrees. In the evening a steaming cup of coffee is a little much. Instead, we’ve been enjoying iced coffee.

I love this because it’s easy to pour over ice and enjoy – no work required! Then I got to thinking…how else can we enjoy Iced Coffee? Popsicles! These are super easy and you only need two ingredients! Dulce de Leche – which is a caramelized sweetened condensed milk found in the bakery aisle and Mocha Flavored International Delight Iced Coffee – found in the refrigerated tea/juice section at Walmart.

Add the ingredients to your blender or food processor and give it a whirl

All you do is add the ingredients to your blender or food processor and give it a whirl.

The liquid becomes very frothy and will almost double in size as you can see here on the left

Mix it together well. It will almost double in size becoming frothy and creamy – just like your favorite coffee!

Then just pour it into the molds and freeze it, at least 6 hours, preferably overnight.

Then just poor it into the molds – fill it just under the top. Don’t be like me and over-fill! That makes it really hard to get the popsicle out intact. I’m speaking from experience here! 😀

  • 2 cups Mocha flavored International Delight Iced Coffee
