All Things Eggnog
I’ve had fun the last couple of weeks putting together some new ways to repurpose leftovers. Last week we enjoyed Sweet Potato Waffles when the crew from KSEE24 News visited our home.
Using leftover sweet potatoes and eggnog and turning them into delicious waffles. The sweet potatoes really gave them a delectable flavor – so yummy! They were topped with strawberries, pure maple syrup and homemade Eggnog Caramel Sauce.
Making your own Eggnog Caramel Sauce is very simple, but because you’re dealing with boiling sugar, you have to be super careful when making it. Resist the urge to stick your finger in it to taste! The end result though? Amazing! We’ve enjoyed this over waffles, ice-cream and french toast. We’ve even dipped granola bars into it. Couldn’t tell you how yummy this is!
Today I used eggnog again as a breakfast treat and made Eggnog French Toast.
It was very simple – four eggs, about 3/4 cup eggnog whisked together. Then I added 1/2 teaspoon cinnamon, 1/2 teaspoon vanilla and a pinch of salt. That’s it – whisked it all together again and sliced french bread really thick. Let it soak in the custard for a couple of minutes each side and fried them in some butter. They were marvelous! Give it a try next time you’re looking for something for breakfast or brunch.
Who’d a thunk?….it’s not just to mix with brandy anymore! 😀
p.s. it’s been suggested that ice-cream should be next so there may be an addendum to this post!
