Fig and Cranberry No Bake Energy Bites are an energy packed treat you can store in your refrigerator or freezer for an easy on-the-go snack! They are loaded with nutritional foods, walnuts, figs and cranberries. Theses bites have delicious flavor and fiber to give you the energy you need!

Ingredients

  • 1 cup walnuts
  • ½ cups dried figs
  • ½ cup dried cranberries
  • ½ cup oatmeal
  • 1 teaspoon vanilla
  • 2 teaspoon honey
  • ¼ teaspoon salt

Instructions

  • Use a food processor with the blade, add the walnuts and pulse until finely ground. Do not process them too long or they will turn oily.
  • Add the figs and again process until they are ground and incorporated.
  • Add the vanilla, honey and salt and pulse until combined. 
  • Remove from the processor and stir in the oatmeal.
  • Using a small ice-cream scoop for uniformity (if desired) portion out each bite and shape it into a small ball. Squeezing together so they hold their shape.
  • Store in a ziplock or plastic container in the refrigerator or freezer.
