Ingredients

  • 1 yellow onion chopped
  • 1 10 oz. package frozen peas
  • 2 cups chicken or vegetable stock
  • 1 clove garlic minced
  • ½ teaspoon minced thyme fresh
  • ½ teaspoon turmeric
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon olive oil
  • optional garnishes, drizzle of olive oil, chopped dill, croutons, Creme Fraische

Instructions

  • Chop an onion and sauté it with minced thyme for about five minutes.
  • Add minced garlic and tumeric. Sauté for another minute or so.
  • Next add this mixture to the blender. Add one 10 oz. package of frozen peas and two cups of chicken stock. (I used chicken, but you can just as easily use vegetable stock and it would be vegan).
  • Blend until smooth and silky.
  • Serve garnished with a drizzle of good olive oil and fresh chopped dill.
