Spicy Mango Salsa Recipe

Ingredients

  • 2 cups mangos peeled and diced into bite sized
  • ½ teaspoon ginger finely minced or substitute with ¼ teaspoon powdered ginger
  • ½ cup red onion very finely chopped
  • ¼ cup bunch mint finely chopped
  • 2 teaspoons rice wine vinegar
  • 1 teaspoon soy sauce
  • 1 teaspoons sesame oil
  • 1 jalapeños pepper seeded and diced, optional

Instructions

  • Slice the mangos, remove the pit and peel, finely dice. Dice the onion.
  • Clean the mint and ginger. Mince well.
  • Combine all of the ingredients and mix well.
  • Can be served cold or at room temperature. Best if made an hour in advance.

Notes

How to peel a mango:
  1. Set the unpeeled mango on the cutting board, bottom down, tip pointing up.
  2. Slice down the side from top to bottom, reserve and remove the second side.
  3. Next slice around the pit.
  4. Remove the peel. Dice the flesh into a small pieces.
