Sweet Hot Pickled Peppers are delicious bright crunches of flavor. Yummy in a sandwich, a bright little snack and great in a salad. They are also great to gift as gifts. Who wouldn't want this bright color of goodness?
In a medium pan over medium heat combine the vinegar, water, salt, sugar and red pepper flakes. Stir until the sugar & salt are completely dissolved. Remove from heat and allow to cool completely.
Slice the peppers in ¼ inch slices & add them to small glass jars. Pack them completely full. Pour over marinade & cover tightly. Place in refrigerator & marinade them for one week before using. Will keep for several weeks in the refrigerator.
