Time to try something new! Kale and Quinoa Greek Salad
There’s lots of foods out there that are good. There are many that are great! But not many are good for you and taste great too!
I have a new favorite salad – have you tried Kale? It’s considered a superfood – packed with vitamins adn nutrients, it seems like everyone is jumping on that bandwagon. Well, I guess I’m no different, but I’ve been on that wagon for a while now and I really enjoy it. I love adding Kale to my soup and just recently have been adding it to my salads, I think it’s a great addition. So delicious & tasty – great crunch too!
Ok…how about Quinoa? Did you know that is also a superfood? Yep, sure is and if you haven’t tried it yet, it’s a little different. (I talked my brother into trying it and he said it did not “bowl him over”) Personally, I love it. It has a nutty taste and crunch texture. It absorbs the flavors of what it is seasoned with and I’ve had fun experimenting with it. Most recently I made such a tasty and crunchy salad, it was definitely worth sharing! I can’t take all the credit though. I was visiting a friend and stopped by a local restaurant on the way home. They offered something similar on the menu. I decided that was definitely a salad I could make at home and put it together last night.
First I started by boiling the Quinoa – just follow the package directions.
Here’s a picture of the Quinoa cooked – you cook it until it releases what looks like a little spiral. It only takes about 15 minutes. Cook the Quinoa and set it aside to cool.
Then I began chopping vegetables. I added orange bell pepper, olives, tomatoes, peperoncini and cucumbers.
You’ll want to remove the seeds in the cucumber, or the salad will get watery. Just slice it in half and run a spoon down the middle of the cucumber to easily remove the seeds.
When you’re done preparing the vegetables, put them and the kale into a large salad bowl.
Make sure it’s a big one, because this turns into a very large salad!
When the quinoa was cooled, I added it and crumbled feta cheese to the bowl and then tossed it with a Greek Vinaigrette Salad Dressing. Yes…you can purchase a store bought one, but it’s so easy to make yourself – you probably have all the ingredients you need on hand – why not give that a try?
